Vegan, Gluten free apple strudels!

I LOVE apple strudels!! but… I’m gluten free so it’s very hard to find a good, gluten free version. This morning I woke up with this recipe idea. I made them and they were so good I had to share right away!

They’re easy to make, gf, nut free, grain free and vegan.

I hope you’ll like them as much as we did!

What you’ll need (for 2 hand strudels) -

4 rice papers

1 apple sliced to small square

1 tbsp maple syrup

Cinnamon

1 tsp avocado oil

To make them -

In a pan drizzle the avocado oil and add the apple, maple and cinnamon (I put about 1 full tsp, you can put more or less), add 3 tbsp water and cook until the apple start to soften.

Soak the rice paper in water (2 at a time) for about a minute until they begin to soften.

Flatten the 2 layer rice paper on a plate and add half of the cooked apple in the middle. Then fold the side toward the middle and roll the rice paper. Repeat with the other rice papers.

Put on a baking pan lined with a baking paper in a pre heated oven to 375 deg. Fahrenheit for 15-20 until the rice paper is nice and golden.
