One Big Pancake!

School is back in session, virtually but morning pace if faster than it was on summer break... You want your kid to eat a good, healthy breakfast but you don't have much time...


Kids love pancakes and this recipe is healthy and fast to make!

Instead of making many small ones, we'll make one big family pancake!

I don't add any sweetener as the bananas add their natural sweetness.

You can add chocolate chips to the mix or drizzle some maple syrup when the pancake is ready, if you want to.


What you need -

3 mashed bananas

3 eggs

1 cup spelt flour

1 tsp baking powder

1 tbsp avoado oil


Mix all the ingredients together until all is smooth.

Put the avocado oil in a pan and when hot, pour the entire mix.

Cook for a few minutes and then flip carefully (you might need 2 spatulas to flip the big pancake). Cook for a few more minutes until the pancake is cooked and flip to a big plate. You can cut the big pancake like pizza.
