Leek Pancakes

Easy to make, baked, GF, Grain free and dairy free!




Ingredients


3 leeks

1/4 cup oil (avocado or olive) + 1 tsp oil

1/4 cup almond milk

1 cup almond flour

1 egg

1 tsp salt

1 tsp baking powder

Black/brown sesame (optional)







Preheat oven to 375 deg. Fahrenheit


Cut off only the white part off the leek then slice it to thin slices.

In a small pan put 1 tsp oil and add the sliced leek. stir fry until it start to brown but don't burn.

Put the leek in a bowl and add all the other ingredients. Mix until smooth.


Line a baking sheet with a baking paper and spoon the mix on it with a big spoon (you want the pancakes bigger than cookies).


Optional - sprinkle with sesame (Black or brown).


Bake for about 20 minutes until golden brown.
