You might think this is very fat heavy from the almond butter, well it is. BUT! this is good fat. The fat from almonds is healthy for you (it doesn't mean you should eat a whole bag of almonds though...). The fat from almonds is healthy monounsaturated fat along with omega 3 fatty acids. You can and should enjoy sweet treats (in moderation of course) and I feel that in this treat you can't overindulge as 2-3 small bites are plenty.
When you purchase almond butter (or any nut butter) please make sure you check the ingredients as not all nut butters created equal and some have some ingredients you should skip..
So what the ingredients list should look like? one ingredient - the nut that it's made of. Almond butter ingredient should be almond. that's it.
The other thing you should should look at when you purchase nut butter is that it's raw. When you buy a raw nut butter you know all vitamins and minerals are still there.
When it's not raw - that means the nut was roasted (heated) and some of the vitamins and minerals are lost on the way...
What you need -
3/4 cup almond butter
2 medium sized dates
2/3 cup hemp seeds
4 tbsp collagen powder
4 oz dark chocolate
In a food processor blend the almond butter, dates, hemp seeds and collagen powder.
When all is mixed, pour into a 9x6 pyrex, lined with baking paper.
In a pan (on low heat) melt the chocolate and when all melted pour over the nut butter mix.
Put in the freezer for a few hours until the bars are frozen.
Cut into small bites and enjoy.
Save in a closed box in the freezer.
