Delicious Sweet Potato pancakes

These pancakes are delicious, easy to make, and gluten free.

You can have them for breakfast, lunch, dinner or snack.

Ingredients -

1 Sweet potato (peeled)

3 carrots (peeled)

1/2 cup almond milk

2 eggs

1/4 cup oil (olive or avocado)

1 cup almond flour

1 tsp salt

1 tsp baking powder

Preheat oven to 375 deg. Fahrenheit

In a food processor with the grating blade on - add the sweet potato and carrots (if you don't have a food processor just grate them by hand).

When all is grated add the rest of the ingredients and mix.

Line a baking sheet with a baking paper and spoon the mix on it with a big spoon (you want the pancakes bigger than cookies).

Bake for about 20 minutes until golden brown.
