It's delicious, vegan, gluten free (and grain free, nut free too).
It's really easy to make and you can have it for lunch or dinner.
So why not give it a try?
What you'll need -
1 yellow onion, cubed
3 garlic cloves, sliced
1 bag baby peppers, sliced
1 eggplant, cubed
2 zucchini, cubed
1 tbsp avocado oil
1 tomato paste tube
salt and pepper
In a pan put the 1 tbsp avocado oil and then add the onion cubes and sliced garlic cloves - cook until translucent.
Add all the vegetables and let them cook for about 10 minutes until they start to soften.
Add the tomato paste and some water to loosen the sauce a little.
Add salt and pepper to taste.
Cover the pan and cook for about an hour.
