I love Tabbouleh salad but since I'm gluten free I can't eat the traditional salad so I came up with this delicious version. It's gluten free and grain free and very easy to make!
What you need -
1 cup cauli rice (you can either ground your own using a food processor or buy a bag of cauli rice)
1 large bundle parsley, thinly sliced
1 large bundle scallions, thinly sliced
1 large bundle mint, thinly sliced
4 tomatoes, chopped
1 tbsp olive oil
juice of 1 lemon
salt and pepper to taste
Mix all the ingredients together.
