Vegan latkes

These are really easy to make, they can be a part of a meal or an easy snack.

They're gluten free, vegan and baked!

What you'll need -

4 grated carrots

2 grated zucchini

1 tsp salt

1 cup almond meal

1/2 tsp baking powder

1/2 tsp cumin

2 tbsp olive oil

Heat the oven to 375 deg. F.

Mix the carrots and zucchinis in a bowl.

Use your hands to squeeze all the vegetables to release all the liquids.

Add the rest of the ingredients and mix together.

Place a baking paper on a baking tray. make the pakoras side by side on the pan with some space between them.

Bake for 15-20 min then flip the latkes and bake for another 15-20 min until golden and crispy.
